Fast food, as in burgers, chicken, tacos, etc., is a great option when you don’t feel like cooking. But there are things that you can cook that are so fast, and so good, that getting into the hot car during a Texas summer afternoon is a much more onerous chore than going into the kitchen for a few minutes.
All the ingredients for this dish were sitting in my refrigerator and pantry. I put the rice on in the rice cooker, and by the time the rice timer sounded, the rest of the dish was ready–that’s how fast it was. So, 20 minutes from start to finish.
And it sure beats franchise fast food.
It’s called Cheap Korean Beef, and the recipe is here. I made it pretty much as written, but I had some spinach and carrots on hand, so I threw those in as well. It made it much prettier, and a bit healthier too. The friend who gave me this recipe served hers as lettuce wraps, and I’d like to try that too. This one is going in the permanent file.
